This Vanilla and Orange Cake is a perfect blend of sweet vanilla and zesty orange. It’s great for a laid-back afternoon snack or a light dessert.
Vanilla and Orange Cake
Ingredients
For Two 6-inch (15 cm) by 3-inch (8 cm) Cake Pans:
3 large eggs
1 ¼ cups sugar (250 g)
Zest of 1 orange
½ cup canola oil (110 ml)
1 teaspoon vanilla extract
4 tablespoons fresh orange juice (60 ml)
About ⅔ cup milk (90 ml)
2 cups all-purpose flour (250 g)
2 ½ teaspoons baking powder (10 g)
For the Glaze:
1 cup powdered sugar (125 g)
Fresh orange juice (just enough to mix)
Instructions:
Preheat your oven to 340°F (170°C).
Get everything ready: Make sure all your ingredients are at room temperature.
Mix the batter: In a big bowl, lightly beat the eggs just to break up the yolks. You can use a hand mixer or a whisk.
Add sugar: Stir in the sugar and mix until it’s all combined.
Add: Mix in the orange zest, canola oil, orange juice, and milk. Stir until it’s nice and smooth.
Add the dry ingredients: Sift together the flour and baking powder, then add it to the wet mixture. Mix just until you don’t see any more flour.
Prepare your pans: Grease your cake pans with butter and flour, or just use non-stick spray.
Bake: Pour the batter into the pans and bake for about 30 minutes, or until a toothpick comes out clean.
Cool and remove: Let the cakes cool for 10 minutes before taking them out of the pans.
Make the glaze: Mix the powdered sugar with just enough orange juice to make a smooth glaze.
Serve and enjoy: Drizzle the glaze over the cakes, slice, and dig in!
