This lemon pie is delicious, and very easy and quick to make. My amazon store here!
Ingredients (20 cm mold)
For the filling:
• 790 g Condensed milk (2 cans)
• 240 ml Lemon juice (1 cup)
• 8 Egg yolks
For the base:
• 250 g Maria or Digestive biscuits (2 cups)
• 110 g Melted butter (1/2 cup)
To decorate: Chantilly Cream or Italian Meringue.
Instructions
1. Place cookies in a food processor until ground.
2. Add the melted butter, and mix until all the cookies are buttered.
3. Place cookies in the mold, spread out and using a glass or cup, crush the cookies so that they are compact.
4. Bake for 10 minutes at 180°C.
5. In a bowl, add the condensed milk and then the yolks and mix.
6. Then add the lemon juice and mix.
7. Pour mixture into the mold and bake at 180° for 20 minutes or until the mixture sets.
8. Let cool and refrigerate for 6 hours or overnight.
9. Decorate with Chantilly or Italian meringue.
10. Serve and enjoy.
